Holiday Recipes for the Weekend!

For those of you celebrating Easter or Passover here are two great recipes to include this weekend!

Pineapple Casserole:

Ingredients: 5 slices of bread- cubed, 1 stick - melted butter, 1 cup of sugar, 4 beaten eggs, 1- 16 oz can of crushed pineapple and juice in can, cinnamon


1.) Mix sugar and butter together then add in the beaten eggs

2.) Mix in pineapple and bread cubs

3.) Stir gently together and sprinkle with cinnamon

4.) Bake in sprayed casserole dish at 350 degrees for 1 hour

5.) Leave the lid on top for first 30-40 mins and remove top for remainder to allow to brown for a bit.

Makes for a great compliment with Easter turkey or ham!

Matzo-Almond Croccante:

Ingredients: 5 sheets matzo,1 3/4 cups sugar, 3/4 cup margarine, 1/4 cup honey, 1/3 cup sliced almonds, lightly toasted, 5 ounces semisweet or bittersweet chocolate (melted), 1/4 teaspoon cayenne pepper, 1 1/2 teaspoons coarse sea salt.


1.) Line a rimmed baking sheet with parchment paper and coat with nonstick spray. Place matzo on sheet in a single layer.

2.) Stir in sugar, margarine, honey, and 1/4 cup water in a heavy saucepan over low heat until sugar dissolves.

3.) Increase heat to medium-high and boil without stirring, occasionally swirling pan and brushing down sides with a wet pastry brush, 13–15 minutes. Pour caramel evenly over matzo. Immediately sprinkle almonds over. Let cool.

4.) Drizzle melted chocolate over caramel, then sprinkle cayenne and salt over. Let stand until chocolate sets, about 30 minutes. Break into pieces.
