- 1. Easy Shepherd's Pie
What you'll need:
- 1 ½ lbs of ground beef
- 1 onion chopped
- 1-2 cups veggies – chopped carrots, corn, peas
- 2 lbs potatoes (3 big ones)
- 1 stick butter
- ½ cup beef broth
- 1 tsp Worcestershire sauce
- your choice of spices – salt, pepper, etc.
- a half cup of milk (for potatoes)
Instructions:
Peel and quarter potatoes, then boil in salted water until tender. (about 20 minutes)
While the potatoes are cooking, melt 4 tsp of butter (1/2 stick) in a large frying pan. Saute the onions in butter until tender over medium heat. (10 mins)
If adding veggies – add them according to cooking time. Put any carrots in with the onions. Then add corn or peas either at the end of cooking onion and carrots or after the meat has initially cooked.
Add ground beef and saute until it’s not pink. Then add salt and pepper and Worcestershire sauce. Finally, add half a cup of beeth broth and cook uncovered over low heat for 10 minutes, adding more beef broth as necessary to keep moist.
Mash potatoes in the bowl with remainder of butter and some milk – season to taste.
Place beef and veggies in a baking dish, and put mashed potatoes on top. Rough everything up with a fork so that it will brown up.
Cook everything in the oven at 400 degrees until its bubbling and brown (about 30 minutes).

2. Irish Soda Bread
What you’ll need:
- 1 tsp baking soda
- 2 tsp baking powder
- ½ tsp salt
- 3 eggs
- 1-pint sour cream
- 1 cup raisins
Instructions:
Preheat oven to 325 degrees. Grease two 8x4 inch loaf pans.
Mix the flour, sugar, baking soda, baking powder, and salt. Add the eggs, sour cream and raisins and mix until just combined. Distribute batter evenly between the two pans.
Bake loaves at 325 degrees for 1 hour.

3. Irish Potato Candy
What you’ll need:
- ½ stick of butter
- ½ of 8 oz. cream cheese
- 3 cups powdered sugar
- 1 tsp vanilla
- 2 ½ cup coconut flakes (optional)
- cinnamon sugar/ or just cinnamon
Instructions:
Cream butter and cream cheese until smooth
Add powdered sugar and vanilla and beat until smooth
Add coconut flakes and beat until smooth
Roll into small balls – then roll in cinnamon sugar
Refrigerate
